What you need to know about cheesecake

Whenever you think about a cheesecake, an image of a sweet, wholesome dessert springs in front of your eyes. But very few people are aware that a cheesecake can be savory too. In such a case, it is served along with crackers in the form of an appetizer. Thus, a cheesecake is much more that just being a dessert.

There is ample confusion regarding the texture of this cheesecake. Basically, the various textures are manifestations of the variety that is available in cheesecakes. So you can have one that is light and airy; or a cheesecake with a thick and dense texture. Some people like it real smooth and creamy.

No matter what the texture of your cheesecake is, the basic ingredient of any cheesecake will always be cheese. Now there is a variety of cheese available to choose from in order to make this dish. It can be ricotta cheese, cream cheese, Swiss cheese, cottage cheese or even Cheddar cheese.

Even the crust of the cheesecake has many variations. It may or may not have a crust. Then, this crust can be just a sprinkling of bread crumbs. You may even choose to have a pastry crust or a cookie crust. Usually, it will have a crumbly crust that is made by crushed cookies or by using graham crackers.

In fact, the name cheesecake is a misnomer. This is because a cheesecake is not really a cake. Rather, it is a pie or it can even be considered as a custard.

You can make your own chocolate cheesecake at home. In order to make crust, just mix 1-1/2 cups of chocolate wafer crumbs with 1/3 cup of melted butter. Now press this on to a 9″ spring form pan and then set it aside.

For the filling, melt 8 ounces of bitter chocolate in a double boiler. Take a separate bowl in order to combine 24 ounces of cream cheese along with a cup of sugar. Now add melted chocolate to this mixture slowly, mixing all the time. Next, add 3 eggs, one at a time, into this mixture. Now pour this batter into the crust and place the spring form pan into a water bath.

You need to bake this cheesecake at 350 degrees for close to an hour. Just shake the pan to see if the center is wobbly. If it is, it indicates that the cake is done. Remove it from the oven and loosen the sides with a knife. Now remove the cheesecake from the pan and allow it to refrigerate for a few hours.

You can make a chocolate topping by boiling a cup of thick whipping cream and then adding a cup of miniature chocolate chips to it. Whisk it well and allow it to cool. A couple of hours before serving, spoon this on top of the cheesecake.

There are many reasons behind the popularity of this food item. Primarily, it is because of the variations that are possible with it. Also, people can modify this dish as per their taste making it a highly popular item on any menu card.
